Chef Norman Van Aken is at the helm, fusing his creative blend of Latino, Caribbean and Asian flavors to create a vibrant and healthy menu that can only be described as ‘New World Cuisine’.
The cylindrical dining space screams ‘fine dining’, with plush white table cloths, cream-tiled walls and flooring to match. The long windows around the edge are framed by classical-styled curtains. For those who prefer a less refined dining atmosphere, we recommend the breezy outside terrace which overlooks the hotel’s lake, gardens and golf course.

With Norman’s statement of ‘Latino, Caribbean and Asian recipes with traditional European techniques’, the menu here is undeniably ambitious. The mains section – which changes seasonally – includes a pan-fried fillet of yellowtail snapper, Mongolian marinated BBQ-style veal with Thai fried rice and Japanese eggplant, and pork ‘Havana’ served with black bean sweetcorn salsa.
For the full Norman’s restaurant experience, the 6-course tasting menu is a must, featuring the likes of American bison with Japanese potato and black fig jus, Florida Gulf cobia served with avocado and truffle, and octopus with squid ink aioli.
Though Norman’s remains The Ritz Carlton’s signature – and most critically acclaimed – restaurant, the luxury 5-star hotel boasts a long list of other venues, including Highball & Harvest (Southern-inspired cuisine), Primo (modern Mediterranean), Citron (American Brasserie), and a sushi bar. Note that formal attire is required at Norman’s (jackets for men). Bookings are recommended in advance for dinner, which starts at 6pm daily.
