Hotel Liberty is a stunning example of what renovating a unique building into a hotel can achieve. The design throughout is sympathetic, yet innovative and the bedrooms are beautiful spaces, decorated to the highest of standards with clever nods towards the building’s former life as a working prison. All staff were attentive without being intrusive, and clearly communicated and worked well as a team. If you own a hotel and want to understand how it should be run - stay here for two nights and you’ll experience everything you need to know to have a 5* rating.
The hotel’s restaurant menu has a good variety of dishes without being complicated, and each one is presented to the highest of standards. We had the set menu which was reasonably priced and great value. Portion sizes were good, and every part of every dish tasted simply exquisite.
We were delighted with everything about our stay except the bedroom temperature due to the lack of air conditioning. The staff explained that the designers believed the thick brick walls would keep the whole building cool, but in fact, given the heatwave this summer, it was uncomfortably hot. To combat this, each room has a Dyson fan, but we ended up asking for a second as the temperature was still too high to sleep well. This is the only reason I cannot give Hotel Liberty a 5* rating. Everything else about this hotel is perfect and I would thoroughly recommend that you stay here - especially once the air conditioning is installed!
